I was craving a good macaroni and cheese but had already had Dream Fields pasta that week and wanted to stay on track so I thought I would try something new. Cauliflower + wonderful cheese sauce = fakeroni and cheese.
I made a small batch of sauce similar to this one I made a small batch of sauce similar to this one. With a basic roux, cream and of course lots of cheese.
Cauliflower has a tendency to get mushy when baked, at least in my experiences. I decided that I would roast it to try and get some of the extra moisture out. After I steamed it, from frozen, I cut it into small pieces and placed them on a cookie sheet and roasted for minutes. Once its roasted mix it into the cheese.
Add it to a small baking dish, cover with cheese and bake at 350 for 10-15 minutes or until it’s bubbly.
This would be an S if you follow THM. I loved this right out of the oven, but it was even better reheated in the microwave the next day!
What replacements for pasta have you used before? There are so many options its fun to try them all, I would definitely use cauliflower again.
