Fakeroni and Cheese THM S

I was craving a good macaroni and cheese but had already had Dream Fields pasta that week and wanted to stay on track so I thought I would try something new. Cauliflower + wonderful cheese sauce = fakeroni and cheese.

I made a small batch of sauce similar to this one   I made a small batch of sauce similar to this one. With a basic roux, cream and of course lots of cheese.

Cauliflower has a tendency to get mushy when baked, at least in my experiences. I decided that I would roast it to try and get some of the extra moisture out. After I steamed it, from frozen, I cut it into small pieces and placed them on a cookie sheet and roasted for minutes. Once its roasted mix it into the cheese.

Add it to a small baking dish, cover with cheese and bake at 350 for 10-15 minutes or until it’s bubbly.

This would be an S if you follow THM. I loved this right out of the oven, but it was even better reheated in the microwave the next day!

Fakeroni and Cheese- THM S
  1. Preheat oven to 400°F
  2. Cook cauliflower according to directions on bag, I use the microwave.
  3. Cut the pieces of cauliflower into small pieces and lay on a lined cookie sheet. Roast for 15-20 minutes.
  4. While the cauliflower is in the oven make the cheese sauce.
  5. Melt butter in a small sauce pan whisk in almond flour to form a roux.
  6. Once the roux is a golden color and in the cream whisking the whole time to combine.
  7. Once it is mixed well let it cook for a few minutes until it is slightly thickened.
  8. Add in cheese a little at a time until desired texture is achieved.
  9. Season with salt and pepper to taste.
  10. Combine the cauliflower pieces with the sauce and pour into a small baking dish.
  11. Sprinkle cheese on top and place in oven for 10 minutes until bubbly.

What replacements for pasta have you used before? There are so many options its fun to try them all, I would definitely use cauliflower again.
