I wanted to make a side dish that I knew would be on the THM plan for easter this year and decided to go with this simple Italian pasta salad. I have never been a huge fan of the creamy traditional pasta salads, so instead I used an Italian dressing as the sauce to tie it all together.
This pasta is great to eat while on plan. There are only 5 carbs that your body adsorbs making this a low carb dish.

Start water for pasta. You want it to be at a rolling boil before you add it in. Add pasta when ready and cook for 10 minutes.
Cut cucumber into small dice, and place in a large bowl.
Cut bell pepper into small dice place in the bowl with cucumber.
Halve or quarter tomatoes depending on size and add into the bowl.
Cut olives in half, if they have pamentos in them they will just add more flavor. I don't like alot of olives so I did about half of my jar. Use as much as you would like. Also if you prefer black that is fine, I went with green so that they would add a salty flavor to the salad.
Your pasta should be ready to drain and rinse. Add in the noodles into the vegetables and stir together.
Add in the dressing and stir to coat, taste and add salt and pepper if needed. Refridgerate for minimum 4 hours, best if left overnight.
