Cilantro Lime Cauliflower Rice

Yes, you read that right cauliflower rice. I decided to finally try this idea that you can use cauliflower to replace many starchy sides, including rice. Surprisingly it turned out better then I thought it would. With the right seasonings, it made a perfect side to fajitas.

Most recipes call for fresh cauliflower that you either grate or use a food processor. I used frozen though and it turned out great. My frozen bag was also a steam bag, I microwaved for about half as long as it called for. This way it wouldn’t get to0 soft or mushy, and so it could finish cooking in the skillet.  I poured the whole bag into my Ninja and pulsed a few times until it was rice like. My goal was to stop before it started to look like a cornmeal consistency, I still ended up with a few bigger chunks but I didn’t mind.

Once I had it ‘riced’ I added it to a skillet with a little coconut oil to fry up a bit. Then I added the seasonings in, including lime juice and fresh cilantro, let it cook for a little while longer and it was finished.

I am new to the THM plan. i have a friend who has lost 80 pounds on this plan and she looks and feels tremendously better, as she told me this personally. i purchased 2 books from Amazon and they can be overwhelming and confusing at times. I’ve always said that I would never go on a diet like Weight Watchers….South Beach….etc…because if the plan isn’t followed exactly it becomes a yo-yo, and i’m not about to stress myself out doing this. my aunt done it for years and it ended in disaster.
    I don’t have a FB account, so finding your site was very helpful, as my resources are limited.
    My problem is that I’m getting all the S, FP….etc…completely confused. HELP????

    • The book has a list of foods for each fuel type. I have recipes and tips on this site and there are other great bloggers out there too that focus on THM, Mrs. Criddles Kitchen, My Montana Kitchen, Joy Filled Eats, Briana Thomas are a few to check out. Also if you don’t want to use Facebook which has many great groups to help you understand I would look into the THM membership site, if you Google it you can see all the benefits and price options.
