THM Vanilla Ice Cream

This ice cream tastes like your typical vanilla ice cream, but there is no need for guilt. This delicious ice cream is sugar-free, low-carb, and a THM Heavy S. The best part is no one would know it! Also a great base recipe for many other flavors.

I got an ice cream maker for Christmas and I was so excited to get started on great ice cream recipes for you. I want to share with you a basic vanilla recipe first. This can be adapted with flavors and mix-ins to make whatever you can think of. I have also made a pretty good chocolate recipe that once I make a couple more times I will share.

This is Trim Healthy Mama approved and is a Heavy S, meaning it has a lot of dairy in it. Being a Heavy S you don’t want to overdo it and have a bunch every night after your  S meal because it could cause a stall. You can melt skinny chocolate and pour over, or even some on plan caramel if you have a good pourable recipe. If you do have a good caramel link it below so I can check it out, I am trying to find one that is easy and tasty.

If you have vegetable glycerin adding about a teaspoon, into your mixture, will keep it scoopable after freezing. If you don’t, like me, just let it thaw a few minutes on the counter or in the refrigerator while you eat dinner. Or if you are impatient at times, also like me, put it in the microwave for 20 seconds and it should be scoopable at least on the edges and top.

  1. In a large bowl combine cream and half and half.
  2. In a small bowl combine egg yolks, Pyure, baking powder and vanilla. Whisk together so the sugar is mixed in.
  3. Pour the egg mixture into the cream and half and half. Stir until well combined.
  4. Freeze as directed by ice cream maker instructions. Mine takes about 20 minutes. I also like to pour mine in after I started the machine turning.
  5. Pour into container and store in freezer. I like mine a little more firm so I freeze it for about two hours before scooping. If the ice cream gets hard in the freezer sit out on the counter for about 20 minutes and you will be able to scoop, or microwave for 20-30 seconds.

  1. Homemade vanilla ice cream is the best!

  2. This is a heavy S, not deep S. Looks good trying it tomorrow!!!

    1. Yes it is a heavy S I’m not sure where the deep S came from, everything I see says Heavy S. Hope you enjoy it.

  3. What does adding the baking powder do? I have never seen baking powder in an ice cream recipe before, so I am curious!

    1. In the recipe I first found it, I thought the same thing. It is supposed to help with the cookie dough flavor or cake batter flavor. I personally think it rounds out the flavor, not necessary if you do not want to use it.

  4. Ok, thank you!
