Beef Stew THM S or Crossover
This THM Beef Stew recipe is perfect for those cold winter days. Put everything in a dutch oven and let it simmer for a few hours, the house will smell great and you will be full and warm after dinner.

Instructions
  1. Mix flour and seasonings together. Coat beef in flour mixture.
  2. Heat oil in heavy bottom pan, perferably a dutch oven. Brown meat in pan. Do this in batches if needed to avoid over crowding. Remove meat from pan once brown.
  3. Add a little more oil to the pan. Add in diced onions and garlic. Sautee until soft.
  4. Pour in red wine to deglaze the pan. Scrape off the bottom as much as you can.
  5. Add back in the meat. Add beef broth and balsamic vingear. Bring to a simmer.
  6. Reduce heat to low, cover and simmer for 2 hours. Stirring occasionaly. (about every 30 minutes)
  7. After the two hours add in the carrots and potatos or any other veggies you have chosen.
  8. Simmer for another 30 minutes until vegetables are tender.
  9. Thicken if desired. See notes.
Recipe Notes

To thicken you can use a cornstarch mixture. About 1 tablespoon of cornstarch to 1/4 cup of liquid, Whisk in until well mixed and simmer or boil a few more minutes until desired thickness. You can use xantham gum as well. It will cause a bit of a gel-like texture if you use too much so start with a little and add more if needed.

A note on the potatoes. When at goal weight they can be used in moderation. There are not that many in here and if you eat 1 or 2 it is not going to cause you a big problem. If your family loves potatoes and are not on plan then use more and just avoid them.

A note on carrots. I love carrots in stews and roast. While they make it go a bit further into a crossover the way I eat them, a few will not be a big deal to you. Just don't over do them. The meal will be more of a S-helper then crossover if you just have a few.
