Cook cauliflower according to directions on bag, I use the microwave.
Cut the pieces of cauliflower into small pieces and lay on a lined cookie sheet. Roast for 15-20 minutes.
While the cauliflower is in the oven make the cheese sauce.
Melt butter in a small sauce pan whisk in almond flour to form a roux.
Once the roux is a golden color and in the cream whisking the whole time to combine.
Once it is mixed well let it cook for a few minutes until it is slightly thickened.
Add in cheese a little at a time until desired texture is achieved.
Season with salt and pepper to taste.
Combine the cauliflower pieces with the sauce and pour into a small baking dish.
Sprinkle cheese on top and place in oven for 10 minutes until bubbly.
