This delicious dish is made in one pot and could not be any simpler. All the flavors of Taco Night rolled into an easy pasta meal that will leave everyone satisfied.
12 oz can
rinsed and drained

about 2 1/2 cups Rotini
Fiesta blend is my favorite, Cheddar works as well
Heat a deep skillet on medium heat. Add the beef and cook until done.
Drain grease. Add seasonings to the meat and mix well.
Add in beans, corn, salsa, uncooked noodles, and water.
Bring mixture to a boil and reduce to a simmer. Simmer uncovered for 10 mintutes until pasta is done. Most liquid will be gone.
Mix in the 1 1/2 cups of cheese and mix in well. This really makes all the difference in the dish.
When done mixing, sprinkle remaing cheese over the top to melt. Serve with chips, salsa, sour cream, and any other taco toppings you like.
