I have not been prepared this week with posts or even social media. Which is sad because it was a goal for this year to stay on top of and even ahead here. But I get busy and then lazy and decide to just watch TV. I do have an excuse for last weekend, though, we had to catch up on season 7 of Walking Dead before the new episode. So we watched for 11 hours straight on Sunday and I got nothing else done. I was hoping to have a great guide on how to Braise for you today but I haven’t finished it yet, next week though I will have it up.

Today though I am going to share with you what I’ve been up to, what I’ve been cooking, and what I’ve been enjoying.
What I’ve Been Up To
I decided that I am going to go and get my Masters of Arts in Teaching. I have been subbing for three years now and I know this is all I want to do. I figured it was the time I just became a full teacher. So with hard work and God’s will, I will be in my own classroom the 2018/2019 school year. But first I have to pass two big standardized tests to get into the MAT program. Which is where all my time has been going, studying.
I have also been subbing. I am staying very busy and working almost every day. Which means all my studying and blogging has to be done in the evenings after dinner and time with the hubby. We like to go bed early so there’s not a lot of hours between work and bed haha.
We got some awesome new furniture. There is a company here called Papa Joe’s Furniture where they hand make and paint rustic furniture. They made us a full living room set for less than the cost of a TV stand anywhere else. If you’re interested in other recommendations though why don’t you check out something like furniture in fashion’s white TV stand, just to give you a better idea of the type of TV stand that you would like. However, my room with all this new furniture is so sturdy and it is nice to have everything match.
What I’ve Been Cooking
The husband and I have been having monthly date cooking nights with another couple. We have made a great comfort food recipe and a pad thai recipe so far. It is a lot of fun to hang out cook together, eat and play games. I’m considering doing a video or series with the recipes that we use. Our Hamburger Stakes in January turned out so so good.
I have been making our favorite Lo Mein noodles for dinner quite a bit. They are so easy to make. I mix my sauce, which varies each time, cook the noodles in the microwave for 90 seconds, mix them in a hot pan with some cooked chicken and they are good to go. I could eat them all the time. A side of dumplings never hurts either.
Corned Beef is a favorite. Hubby has been the one cooking the corned beef but I love the stuff. It is so simple to make and a perfect example of braising meat. We have been eating it in sandwiches but it is also good on its own with cabbage or potatoes. I am working on a full proof recipe to share with you soon!
This tasty gluten- free and sugar- free lava cakes. They were perfect for Valentine’s Day.
What I’ve Been Enjoying
Well Yes! soups. They are on plan and so so good. I have had the Sweet Potato Corn Chowder and the flavor was even better then I expected. I also tried the Roasted Chicken with Wild Rice and it is exceptional.
Street Kitchen Kits. There are many different dishes to choose from. You get the spice pack, seasonings, any sauces or special ingredients that you need in the kit, all you have to do is add the meat and cook as directed. We tried the Tikka Masala from the Indian series and it turned out great!
Great Value Light Yogurt. Not really on plan but I can’t eat the Tripple Zero so I went for an option that was suitable for me. I love the Peach and Strawberry Banana flavors.
Blogger Meet Ups with some great ladies in the area. It is so much fun to get some face to face time with people who enjoy the same things you do. I enjoy talking to them answering and asking bloggy questions.
Spending time with the Hubby; watching TV, going on walks, working on house projects and things like that.
